Tuesday

Breakfast:
Three Eggs Scrambled w/Kerrygold Butter

Lunch:
Sushi (A LOT) at our favorite place, Fin Sushi

Dinner:
Chicken (3oz) Stuffed w/Spinach, Asparagus, Roasted Red Pepper, and Capers


You can follow these directions, but use the goat cheese in place of the feta and add sliced roasted peppers and capers to the spinach-aspargus mix. You can also use chicken breast cutlets (usually a little more expensive), which are thinner and smaller, to decrease the cooking and prep (no butterflying of the chicken breast) time. The cutlets were also about 3oz each making them perfect for the two of us (four in a package, one for me and two for Scott for dinner and one for my lunch the next day).

Snack:
Handful of Dried Mangoes
