Roasted Beets, Carrots, and Brussel Sprouts
Lunch for tomorrow:
I pretty much cleaned out my fridge with this meal. I also made a salad w/vinaigrette (lemon, olive oil, black truffle oil, and sea salt) and fruit salad for the plane ride tomorrow...we're going to Maui!!! The flight is eight hours direct so, this should help out a little bit...I'm thinking that the airline food may not be too Paleo-friendly.
