Two Poached Eggs w/Spinach
We went back to CJ's again this morning. I love this place! The cost is totally reasonable and they accommodated my seemingly weird request for poached eggs and a pile of spinach. Like I've mentioned before, I really like poached eggs with runny yolks, so I thought that rather than the traditional toast and eggs, I would eat them served on a bed of spinach...using the heat from the eggs to wilt the greens. It was perfect!
