I used fresh ginger instead of dried, fresh jalapeno instead of chili-garlic paste, and omitted the water...besides that I used the recipe as a base and then adjusted the ingredients to taste. YUM! On another note, this marinade is a version of a Bobby Flay recipe used in his Yucatan Chicken Skewers...so, try it with chicken (skewered chicken thighs make a great hors d'oeuvre) and use the "Sunshine Sauce" as your dip!
