Paleo Day 23

Breakfast:
Two Banana "Bran" Muffins
Lettuce Wrapped Tomato, Avocado, and Cucumber

I made these: http://www.elanaspantry.com/bran-muffins/ muffins again, but this batch added two smashed bananas to the batter. These muffins were moist and delicious! Definitely try this recipe! The batter takes just minutes to make, as there is no sifting or separating like with normal muffin recipes. They would also be good with the addition of chopped walnuts and cinnamon or pecans and pumpkin puree.

Lunch:
Two Hard Boiled Egg Whites
Spinach w/Tomatoes, Avocado, Sunflower Sprouts, Sunflower Seeds, and Lemon-EVOO Vinaigrette
Handful of Green Grapes

Dinner:
Almond Flour (Ground Almonds) Crusted Halibut w/Butternut Squash Puree and Sauteed Spinach

I wanted to create a crust for my halibut and was inspired by the almond-crusted trout I had this weekend, at Jasper's. YUM! I lightly salted (w/sea salt) the halibut filet, rolled it (on all sides) in two tablespoons of almond flour, and then sauteed it in one tablespoon of EVOO for a minute or so on each side (depending on the size of your filet). The crust was a nice contrast to the creaminess of the butternut squash puree and all of the flavors worked really nicely together. I am a summer girl for sure, but I love the squash, root vegetables, and apples that fall and winter bring!
