Thursday

Breakfast:
Elk Burger w/Egg and Avocado (1/2 Large)
















Yes, I'm still loving the buffalo, but my current love affair is with ground elk...YUM! I ate this combination at about 7am and then practiced some yoga at 8:30...I was a little worried that I would be too full to move comfortably, but found that after a few minutes, I was able to flow nicely and actually felt pretty strong this morning. Yeah, elk!

Lunch:
Scallops (8oz) w/Kale (one large bunch, shredded), Red Curry, and Coconut Milk

To a warm pan, add a scoop of curry paste and coconut milk (1/2-1 can) and whisk until smooth. To the curry mixture, add the shredded kale and toss to coat:











 



Once the kale has begun to wilt, add scallops (or other protein) and cover. Cook until scallops are cooked through. Serve:
 














Dinner:
Almond-Crusted Trout w/Zucchini, Cauliflower Mashers, and Red Pepper Sauce (from Jasper's)

We were out celebrating my first paycheck in just about forever, so I also had some wine...nothing really Paleo about tonight's meal... I did, however, only partake in two small glasses. The odd thing about this area is that we have really stringent liquor laws, but if you don't finish your bottle of wine...you can cork it and take it home with you...totally legal. Strange...

Workout:
Still no heavy lifting (a.k.a. CrossFit), but I did Yoga it up! And, speaking of yoga...I can now touch my palms to the floor! This is kind of a big deal considering I was barely able to touch the tips of my fingers to the ground, a few weeks ago. I can't wait to see how this new found flexibility is going to effect my CrossFitting! Considering the fact that the flexibility and strength of our hamstrings, and legs for that matter, play such a huge role in our lifts, I'm hoping for big things in the coming weeks. I'll keep you posted.
