Makes 30 "Sliders"
Ingredients:
2lbs Ground Meat (Buffalo, Beef, Venison, Elk...)*
30 Paleo Buns, recipe follows
Toppings:
-Bacon
-Arugula or Mache
-Tomato (use Roma tomatoes and slice horizontally)
-Avocado or Guacamole
-Shallots (I like to use thinly-sliced shallots for sliders, instead of red onions, for their small size)
-Dill Pickles
-Mustard, Homemade Mayo
*This should create about 30- 1oz burgers, after cooking. I just use sea salt and pepper for my burgers, but make them how you like. Use a small ice cream scoop for even size. They can be grilled, cooked in a pan, or baked in a 400F oven (my choice when making large batches for a party).
Paleo "Slider" Buns:
3/4 Cup Coconut Flour
2T. Arrowroot Powder
1/2 tsp. Baking Soda
1/2 tsp. Sea Salt
6 Eggs, beaten
1T. Braggs Raw Apple Cider Vinegar
1/2 Cup Melted Ghee (if you don't do ghee, try coconut oil...but, know that I haven't tried it, so don't know how it will work)
For topping:
1 Egg, whisked
1 T. Sesame Seeds
- Preheat oven to 325F.
- Sift coconut flour, arrowroot powder, baking soda, and sea salt into a bowl.
- Add beaten eggs and mix to combine.
- Add melted ghee and vinegar, mix until smooth.
- Scoop batter onto a silpat or parchment paper- lined baking sheet, in 1 T. balls (I used a small ice cream scooper). You should have about 30 buns.
- Brush the tops of the buns with whisked egg and sprinkle with sesame seeds.
- Bake for 15-20 minutes, until golden brown and slightly puffed.
- Remove from oven and transfer to a baking rack, to cool.
- Slice in half and serve with "slider" patties and toppings.

This bun recipe is inspired by this bread recipe that I recently discovered; I modified it quite a bit, but since this is where it all began, I thought it worth mentioning. We host an "Annual Super Bowl Party" at our house and, though we're going to Portland this year, I thought that it might be nice to share a few recipes that I would've liked to make this year. I usually serve burgers, in some form, but like the idea of actually getting to eat a bun and offering a bun that other non-Paleo eaters would actually enjoy. And, I really like that it's has a coconut flour base, versus an almond (which I've been limiting) flour base. This bun and burger is awesome and I'm so excited to share it with you!
I'm so glad that you created this recipe! I'm definitely going to have to try it for my super bowl party. It's hard enough explaining why I've gone paleo... but showing people that there are NUMEROUS food options, really helps! Thanks for the great recipes!
ReplyDeleteYou're welcome! Don't even tell them that they're "Paleo", I don't think you'll need to. If anyone asks, just say they're homemade! I'm going to post a few more recipes that can be made the week leading up to SB, so that you're just heating things that day. Look for that in the next few days.

ReplyDeleteI've done a lot of cooking/baking with almond flour. I prefer the texture over coconut flour in most recipes, but I try to avoid it. I overused it when I first started Paleo and feel like it (and too much fruit) was hindering me from leaning out and was irritating my skin a little. I do keep it on-hand, because I like to create fun alternatives to baked goods every now and again. I made a bacon-leek tart last year that was awesome! I'll post the recipe this week.

ReplyDeletethey were so yummy! a tad bit dry…I think maybe it's from using the coconut oil? This was my first time trying to bake anything paleo, and I was very pleased! my husband is in love with burgers…so I think this will help to ease the pain of not having them;) Better then with just lettus leaves as the bun!

Baking with coconut flour does tend to create a drier product than almond flour. I didn't experience that with the ghee, so it's either the coconut oil or egg size...I would guess. You could try adding another egg, next time.
ReplyDeleteI hear ya, with the lettuce wrap...I don't mind with a big burger, but sliders just sort of call for a bun. I love sauteed mushrooms...good call!
Did you try a larger bun or just the slider buns?
I would say I did sliders…but I only got 12…so they were probably larger then what you were making;) I did them by hand since I didn't have a scoop. maybe in-between? I'll try an extra egg next time, good idea!

ReplyDeleteIt's really going to depend on how big you make them, how many you fit on a pan, and whether, or not, you have other things in there for your party, but...if you make 30 (from the 3lbs of meat, so a little over 1oz each), use two baking sheets (so that they have room around them and aren't steaming), and they are the only things cooking, I would say about 10-15 minutes. Check them at 10 minutes for doneness.

I made your sliders last night for a party and they were a hit! I only got 12 buns out of the recipe, but they were great. I used coconut oil instead of ghee. I sauteed some onions and mushrooms to put on them - delicious!
ReplyDeleteTry 1/2 coconut flour, 1/2 almond meal, if you feel like 100% coconut flour makes it too dry. I've used a biscuit recipe from Robb Wolf's site that splits the same way. And don't be afraid of ghee, it is better for flavor & texture than coconut oil in recipes like this!
